Butter Bakery on Brunswick
We were sorry to see that coffee shop and record store Rabble & Lion had closed its doors on Brunswick St. But as they say, when one door closes, another one opens. In this case, it’s Butter Bakery, the passion project of local entrepreneur Evan Santiago. Santiago is also the owner of Hybrid Coffee & Kitchen, located downtown on Manila Avenue—hence the Hybrid-embossed logo on Butter Bakery’s glasses, a subtle nod to his first venture.
The concept behind Butter Bakery is a global-themed, small-batch bakery inspired by Santiago’s childhood in diverse Jersey City and his travels across the world. Visitors can expect an ever-changing menu of treats that reflect this multicultural influence: Swedish cardamom buns fragrant with spice, buttery French viennoiserie, Irish folded scones, and a growing rotation of seasonal specialties.
The narrow corner space on Brunswick offers both comfort and creativity, with artistic images of bakery inspirations on the walls and a long glass counter filled with pastries, served by a lovely and eager staff. Santiago’s vision is to create a place where community, culture, and craftsmanship come together in every bite.
Butter Bakery is now open at 156 Brunswick St.
