The Feathered Fox Fits Right In
Lovers of Executive Chef Chris Siversen’s Maritime Parc are vibing with its newest iteration – The Feathered Fox. Formerly of Livingston, NJ, the Feathered Fox was and is a seafood and steakhouse, much like the old Maritime Parc. Chef Siversen’s focus on locally sourced ingredients and his classic Culinary Institute origins is very much still the focus, amplified with some fun and creative enhancements from The Feathered Fox.
The cocktail menu, to start. Mixologist Erin O’Brien has created her own take on classic cocktails. The Feathered Fox Manhattan is crafted with Sazerac 7-year Rye, Carpano Antica Vermouth, Angostura Bitters and Filthy black cherries. The Foxy ‘Ol Fashioned gets a nice upgrade with housemade Ol’ Fashioned syrup. On the lighter side, a glass of the Thierry Merlin-Cherrier Sancerre is smooth, crisp and refreshing. The menu includes a Raw Bar, Sushi Bar and a hefty list of salads and appetizers (check out the decadent Warm Garlic Bread, served with a blue cheese dipping sauce). Mains focus on seafood and pasta with dishes including Strigoli Seafood Pasta cooked in a nicely light lemon-thyme reduction and Lobster Fettucini Carbonara.
The steaks and chops here are in a starring role with options like Prime NY Strip, Dry-Aged Prime, Porterhouse and Filet Mignon, and Lamb Chops, all served with glazed cippolini. Vegetarians will do just fine with two veg sushi rolls and lots of yummy vegetable and starchy sides. The Feathered Fox is open Wednesday and Thursday from 5:30 – 10:00pm, Friday and Saturday from 5:30 – 11:00pm. Sunday they are open for Brunch from 11am – 3pm and then reopen for Dinner from 5:30 – 10:00pm.
